The pig is an animal, a mammal that is domesticated and raised for its meat. Pork meat is consumed in two main forms in France: fresh meat and charcuterie. The pork market in France brings together breeders, slaughterers, processors, retailers, butchers, caterers, butchers, and mass retailers. In France, c ome players have integrated the entire value chain, such as Leclerc and Les Mousquetaires as both producers and distributors.

The world pig population is currently in decline, since the Chinese pig herd suffered heavy losses in 2018-2019 due to African Swine Fever. This disease has led to a series of forced cullings and large quantities of Chinese meat drowned out world markets in 2018. However, in 2019, as Chinese production could no longer meet domestic consumption, China began importing large quantities, causing a record price increase pork.

While French producers have benefited from this price increase since 2019, it is not enough to revive the French market, whose growth has been at half-mast for many years. Pork is gradually losing ground in French consumer habits. Nevertheless, it remains the first meat consumed in France and has been for more than 20 years. Indeed, pork continues to seduce with its low prices and its wide variety of deli products which account for almost 70% of the market.

The sector seems to be turning more and more towards organic farming, with the commitment of increase the share of organic in total production to 10% by 2030, thus maintaining new ways of consuming and reawakening consumer interest
