1.1 Définition et périmètre d'étude

Le marché du sel alimentaire est structuré autour de deux principaux segments : le sel destiné aux individus (sel de table, sel de cuisine) et le sel destiné à l'industrie alimentaire (matière première de base). Utilisé comme conservateur, le sel alimentaire fournit au corps humain deux nutriments essentiels :

  • Le chlorure ;
  • Le sodium, important pour l'équilibre hydrominéral des cellules et de l'organisme.

Ce condiment essentiel combine des arômes, des ions sodium et du chlorure, pour donner un goût salé caractéristique aux aliments qu'il accompagne ou dans lesquels il est incorporé. Bien que des quantités modérées de sel soient essentielles pour la santé, des quantités excessives de sel peuvent être nocives. Sous l'effet d'une concurrence étrangère féroce dans un contexte de campagnes de communication sur l'alimentation et la santé, les producteurs de sel ont vu leur volume de production diminuer au cours de la dernière décennie que ce soit en B2B ou B2C.

Les Portugais sont de grands consommateurs de sel. Ils en consomment en moyenne 10 grammes par jour, soit le double de la quantité recommandée par l'Organisation mondiale de la santé (OMS). De plus, le marché se caractérise par une forte concentration de principaux acteurs. Conscient de l'importance de la réduction de la consommation de sel, le gouvernement portugais a étudié des stratégies pour encourager une réduction de sa consommation. Le programme Menos Sal Portugal a été pensé exactement dans le but de sensibiliser la population. Malgré cela, on ne s'attend pas à ce que le marché diminue sensiblement à court terme.
