Oysters are marine mollusks that are anchored in rocks and can be farmed in special nurseries. They are mainly farmed on the coast, near lagoons. Oysters have a high commercial value and are consumed in the European Union mainly from the September to April season, as they are considered particularly tasty and high quality at this time.

Globally, China dominates oyster production, far ahead of Japan, South Korea and the United States. The global market for oysters is forecast to grow at an average rate of 5.5% per year between 2021 and 2030[Dataintelo].

The total European production of oysters is 11% in relation to the total EU aquaculture production. In 2020, European oyster production increased by 2% compared to 2019[Eumofa]. The largest European producer of oysters is France. The second place is occupied by Ireland. Throughout Europe, mainly 2 species play an important role: the Pacific rock oyster and the European oyster. The Pacific rock o yster makes about 90% of the offered goods. The European oyster is considered the most noble specimen and is therefore up to three times more expensive than other species[Chefs Culinar].
