Les glaciers sont des distributeurs alimentaires spécialisés qui commercialisent et produisent souvent de manière plus ou moins artisanale, des glaces. La production est souvent faite à partir de produits locaux, avec la vente de glaces aux saveurs plus exotiques et diverses que les traditionnelles saveurs qu’on trouve en grandes surfaces alimentaires (vanille, chocolat, citron, fraise, etc.).

Au niveau mondial, la fabrication de glace artisanale est dominée par l’Europe qui représente 60% du total, et c’est l’Italie qui se place sur la première marche du podium européen avec 30% de la production du continent.

En Espagne, la consommation de glace est la plus forte. En Andalousie avec une consommation annuelle de 28,8 millions de kilogrammes, devant la Catalogne (23 millions), la région de Madrid (19,6) et celle de Valence (17,9). La consommation de glace a progressé de 4% en 2021 et le marché conserve une forte cyclicité : plus de la moitié de la consommation étant réalisée durant les mois de Juin, Juillet et Août [Economia3].
