David Hervé is the son and grandson of oyster farmers whose passion for oyster farming led him to set up his own business in 1995.
Based in the Marennes-Oléron oyster basin, the company uses a traditional method of oyster farming called "Pousse en Claire", which consists of meticulous selection of the oysters. the oysters are carefully selected, raised and matured in oyster beds for 6 to 8 months, with one and a half oysters per square meter.
The company has 3 hectares of sea oyster beds at its disposal
The oysters are finished at Saint-Just, in the 40 hectares of oyster beds dedicated to refining, giving them their distinctive flavors.
