Sisteron's municipal abattoir is the largest sheep slaughterhouse in France and the second largest in Europe. The slaughterhouse currently has a capacity of some 600,000 lambs a year, or around 10,000 tonnes. Today, over 450,000 lambs are slaughtered each year, representing around 20% of the South-East market. The plant employs 52 people in 5 separate departments: production (including tripe), maintenance, cleaning, administration and quality.
